Spicy Italian Sausage Penne with Sweet Dolce Red Pepper Sauce
This red pepper sauce also makes a great accompaniment for grilled chicken or seared halibut.Red Pepper Sauce
- 3 Windset FarmsTM DolceTM Super Sweet Red bell red peppers, seeded and chopped
- 1/4 cup butter
- 3 shallots, sliced
- 3 teaspoons sugar
- 1 1/2 Tablespoons rice vinegar
- 1 cup chicken or vegetable stock
- 1 1/2 teaspoons kosher salt
Pasta
- 1 pound penne, cooked
- 4spicy Italian sausages, casings removed
- 3 Tablespoons extra virgin olive oil
- 1 large clove garlic, finely minced
- 2 Tablespoons basil, finely chopped
- 1/4 cup Parmesan, finely grated
Place a skillet over medium/low heat and add the butter. Melt the butter and add the shallots and the peppers and the salt. Sauté until just soft, about 7 minutes. Add the garlic and sauté for 2 minutes. Add the sugar and the rice vinegar and reduce until syrupy, about 4 minutes. Add the stock and bring to a boil. Simmer for 5 minutes. Remove the sauce from the heat and puree in blender.
Place a skillet over medium heat and add the olive oil. Brown the sausage meat in the oil and drain off the excess oil. Add the pureed red pepper sauce and simmer for 2 minutes. Toss the cooked penne with the sauce and the chopped basil. Top with grated Parmesan and serve.
